top of the muffin to you!


Have you seen that Seinfeld about the top of the muffin? It's true, I could eat just the top of the muffin and throw the rest away. Here's a really good muffin recipe that stores in the fridge for up to 6 weeks!



RAISIN BRAN MUFFINS
(1) 15oz Box Raisin Bran Flakes
3 C Sugar
5 C Flour
5 tsp Baking Soda
4 Eggs
1 C Oil
2 tsp Salt
1 qrt Buttermilk

Mix dry ingredients well. Beat eggs; add to the dry ingredients along with the vegetable oil and buttermilk. Mix all ingredients together. Spoon into greased muffin pan. Bake at 375 in preheated oven for about 20-25 minutes. Store in covered container in the fridge for up to 6 weeks. Do not re-stir mixture. Makes 4 dozen.--LeShan
